We’ve had our Instant Pot for almost two years now so I have no idea why it hasn’t occurred to me til now to share my husbands delicious Instant Pot recipe!
I’m going to start off with my favorite!
Instant Pot Chick Pea Curry!
This curry is one of my favorite meals my husband makes! I tend to introduce him as my personal chef because seriously! I mean, I can cook but I prefer that he does, it just tastes so much better!
Not only is it delicious but its really easy to make. I love all our followers but i think im mostly sharing his recipe so i can have it documented and easy to find for my own use hahaha!
- 2 cups chick peas
- 3 cups water pressure
- 1 bay leaf
- 1 tablespoon of mustard seeds
- (2 large) tomatoes
- 1/2 cup of coconut milk
- 1/4 cup raw cashews
-Place the chick peas and water in Instant Pot to pressure cook for 30 min with bay leaf (manual button and set time)
-Make sofrito with onions, garlic, salt, pepper, cumin, curry, mustard seeds, tomatoes
-Then once tomatoes are cooked down to a paste put them in the vitamix
-Put all sofrito in the vitamix or blender with 1/2 cup of coconut milk and a 1/4 cup raw cashews
-Blend – if too thick add more coconut milk
-Then pour mixture into the chickpeas and into instant pot to let simmer for 20-30 minutes
