We have to get even more creative living out here in the desert when the heat really starts! So having a healthy foods and essential oils class just seemed like a better route than wallowing indoors and going crazy by myself with two children.
Stepping out of comfort zone, giving classes and hosting meetings
I have been giving Essential 101 classes and weekly oily meetings, so of course I’m open to trying something new. At the suggestion of some friends we planned our first health foods class!
Because it was our first class I decided to stick with foods I’m comfortable with, easy to prepare, quick and healthy meals too. I almost felt overwhelmed because we all have children and my kitchen is small, and I’ve never done this before, and will they really like this?!
In the end it turned out really nice and we all enjoyed the food. Nothing better than having fun, being productive and being amongst amazing friends!!!
- Coconut milk
- Chia pudding
- Gluten free muffins
- Salsa Dip
It’s crazy to think we made all of this in less than two hours and still had time to eat, enjoy and chat!
I’ll post the recipe for the Salsa here because it’s very simple!
- 3-4 tomatoes diced small
- Quarter of a small red onion, diced small
- 1scallion finely chopped
- Squeeze half a lime
- 2TBS or more chopped cilantro
- 3 drops of lime Vitality or lemon Vitality essential oil
- Splash of olive oil
All you have to do is mix it all together and eat with your favorite dipping chips!
We enjoyed our salsa with some nice and ripe avocado!
