Fudgy Brownies, gluten free, dairy free, almond and coconut flour deliciousness

Thanks to Paleo Running Momma Michele for inspiring me with her incredible recipe. Finally giving brownies another go.

Living with a gluten-free man makes it hard to indulge in yummy desserts! So got to make do with what we have!

I wouldn’t say these are necessarily healthy…but maybe healthier?! Haha, anyway I do feel less guilty, or no guilt, when eating these!

Ultimate Brownies Taste Test

The children. Yes, the children. They are the ultimate taste testers. You will be sure if the recipe is worth sharing if the children have found this to be delicious! Well you can guess, mine have loved this recipe.

Brownies Ingredients

 

  • 1/2 cup almond flour
  • 1/3 cup raw cacao powder
  • 1/2 tsp baking soda
  • 2/3 cup coconut sugar
  • 1/4 tsp fine grain sea salt
  • 1/4 cup coconut oil
  • 2/3 cup  chocolate hazelnut peanut butter
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla powder
  • 2 eggs: 1 whole egg 1 yolk only

 

Now to Prepare!

  1.  Preheat your oven to 350 degrees.
  2. Combine all DRY ingredients including the coconut sugar in one bowl, then set aside.
  3. In a medium saucepan over very low heat melt the chocolate nut butter
  4. Allow to cool and stir in the coconut oil, then the maple syrup, add the eggs and beat until smooth and well combined.
  5. Stir it all together until well mixed
  6. Scoop the batter into a parchment lined 8x 8 inch baking pan, scraping to get all the batter.

YAY now just bake!

Bake in the preheated oven for 20-25 minutes or until just set in the center.

Some tips from Paleo Running Momma Michele

Allow to cool completely to room temp before cutting into squares** Due to the coconut oil content I recommend chilling in the fridge to set prior to cutting. Drizzle with extra melted chocolate if desired.

These brownies are at their fudgy-est after chilling in the fridge and then allowing to settle back to room temp for about an hour. Store leftovers covered in the refrigerator for up to 4 days, or freeze for later use.

My recipe is a bit different than Michele. I made due with a lot less chocolate and it was still amazingly fudgey and chewy.

I let my edges crust a bit because its soooo yumm like that haha! Also, my other baking pans were in use so, HAHA yep, I used a pie pan! Don’t judge me….!

A few friends got to taste test as well, hence the little white packaging just for them!
